Dairy-Free Pesto

 

Have lots of basil? Don’t know what to do with it? Try this easy, delicious, homemade and dairy free pesto on your next Nostalgica pizza dough!⁣

Pesto is a great way to use up an over abundance of basil. Pizza doesn’t always have to be with red sauce. Try vibrant pesto, fresh tomatoes, kalamata olives, and red onion or pesto, grilled chicken, red onion and green peppers. Whatever the combination, it’ll be delicious and the perfect farewell to summer! 

 

Ingredients:

2 cups of fresh basil or spinach

¼ cup pine nuts or walnuts (*roasted – optional)

¼ teaspoon unrefined salt

½ cup of cold press olive oil or avocado oil

2 tablespoons of nutritional yeast

1 tablespoon fresh lemon juice

2 fresh garlic cloves

 

Directions:

Add all ingredients to a Nutra-bullet or high-speed blender. Blend until smooth, then transfer to a glass container. Store in the fridge or freeze!
