We love finding ways to level up the basics, making our favourite things a little more fancy and decadent like this tomato jam. It’s rich, sweet and savoury with a bit of heat. It belongs on just about anything: slathered on a burgers, eggs, grilled cheese, on a crostini with melt in your mouth burrata cheese or sliced avocado.
Jam, spread, dip, condiment, whatever you call it… it’s delicious!
3 cups of tomatoes, roughly chopped. We used tricolour cherry tomatoes
1/2 a red onion, diced
1 fresh red chili, remove seeds and thinly dice
2 cloves of fresh garlic, grated
1/4 cup of coconut sugar
1/4 cup of balsamic vinegar
1 teaspoon unrefined sea salt

Place all ingredients into a pan and simmer for 30-40 minutes or until thick. Transfer to a glass jar. Keeps in the fridge for up to 4 weeks.
